Classic apricot jam?
Almost!
On returning from holidays in Cervia, we stopped at the "Il Fruttaeto delle Saline" farm to buy local fruit and vegetables, grown with methods that exclude treatments that are harmful to the environment and health.
I made a jam with apricots from the orchard and a few other ingredients: apricots (73-80 g per 100 g of finished product), sugar and lemon.
The peculiarity is that I also added some apricot seeds (in a very small percentage). In fact, the kernel contains a seed similar to the almond that I blanched and peeled.
The confiture is sweet, with a slightly acidic tip, typical of apricot.
It is dense but not solid, it has been blended and is easily spreadable.
