This jam with a dense and compact consistency recalls the taste of marrons glacé, but with the added fruity note of the pear. I recommend it to garnish meringues or panna cotta.
The percentage of added cane sugar is reduced (19%) but the final sweetness is still high, thanks to the sugars of pears and chestnuts.
The chestnuts are steamed and are without preservatives and gluten-free.
The pears are Abate quality.
The vanilla used is pure, extracted from the pods.
